Who doesn’t like a good chocolate chip cookie every now and then? More like as many as I can fit in my mouth without my kids noticing. Adding some Andes Mints on top are like the cherry on top, but better than cherries because it’s mint…Andes Mint. You get my point. How about some Andes mint chocolate chip cookies?! They are shove-some-in-your-mouth-and-take-the-rest-of-the-plate-to-the-bathroom-to-hide-from-your-kids good!
These are super easy to make. We made like a thousand of these for my mom’s retirement party last year and luckily we had enough leftovers for me to
take home and freeze scarf down. They also freeze really well for those of you that have more willpower than I do. So more reason to make tons!
On to the easy peasy recipe! 2 ingredients is all you need! A bag of Andes mint baking chips and chocolate chip cookie dough. Now, of course, if you already have a chocolate chip cookie recipe that you love, you can use that to make the cookies. For me, I just grabbed pre-made chocolate chip cookie dough from the grocery store and baked those. Usually I am all about baking and cooking from scratch, but you all know how life gets busy sometimes and all you want is a delicious cookie! Like RIGHT NOW! Well, pre-made cookie dough made this happen a little quicker for me.
Preheat your oven to 350 degrees. Start spooning about 1 inch size balls of cookie dough onto an ungreased cookie sheet. Bake for 11-13 minutes or as directed on your pre-made cookie dough label.
Once they are done, pull them out and let them cool for only about a minute. While they are still warm, I put about a teaspoon of Andes mint chips on top of each cookie.
Once I got all of them covered, I took the back of a spoon (or anything that allows you to spread…butter knife, spatula,
my daughter’s fingers, etc.) and spread the mint chunks around on the top of the cookies. Just think of putting icing on a cookie. You can always add more if the cookies are still warm if you want more mint taste. Let the cookies cool and hide them from the kids!Just look at those little fingers ready to pounce!
