I am not very picky when it comes to food. Sometimes that can be bad. Very bad. I think I can count on one hand the number of food items I don’t like. And in the summer, food just tastes better! Everything is so fresh and colorful. One of my favorite things to make at home is salsa! And this salsa, my friends, I could eat it every.single.day! I make this for family gatherings any chance I get. It is always gone and I never get to bring any leftovers home. But you know what? It doesn’t bother me. This salsa is so easy to make, that I can whip it up in minutes.
Finding the right salsa can be somewhat of a science. It can’t be too runny. No one likes watery salsa! It can’t be too chunky either. I have no good reason other then I don’t like it chunky. So there! Last but not least, it has to be packed with tons of fresh flavors. This recipe checks off all the boxes on the wishlist! During the summer, when I have fresh Roma tomatoes in the garden, I will use those in the recipe. In the winter months, I prefer good ole’ canned diced tomatoes. Either way you decide to go, you will be completely in love! I mean, look at this face! It says it all!
This recipe couldn’t be easier! Begin by draining a can of diced tomatoes and a can of Rotel and place into a food processor or blender. Add in the red onion which has been peeled and quartered. Next, slice the jalapeño lengthwise and remove the seeds. Add in the jalapeño, cilantro, salt, sugar, cumin and lime juice. Begin pulsing the processor until you reach the desired consistency you like. I always test the flavor using a tortilla chip. One of my favorite things about making this is the adaptability of the recipe. Instead of a red onion, use white. If you love cilantro, add more to taste! You can really play with it and make it perfect for you and your family! Enjoy!
- 1 28 oz can diced tomatoes, drained
- 1 10 oz can Rotel, drained
- 1/2 cup cilantro
- 1 jalapeño, deseeded
- 1 red onion, peeled and quartered
- 1/2 tsp sugar
- 1/2 tsp cumin
- 1/2-3/4 tsp salt
- 1/2 whole lime juice
- In food processor, combine diced tomatoes, Rotel, cilantro, jalapeño, onion, sugar, cumin, salt and lime juice. Pulse until you reach the desired consistency. Adjust seasoning to taste.
- Serve immediately with tortilla chips or place in refrigerator until ready to serve.
