One of our favorite meals to have growing up was Taco Salad. Our mom would only make it for special occasions like birthdays and family reunions and usually only in the warmer months. So basically, we only got to have Taco Salad like twice a year. Now that I’m older I can make it whenever I want! Take that! For some reason, I tend to only make it for family get togethers…over the holidays…in the summer. Why do I have to follow in my mom’s footsteps even when it comes to Taco Salad?! I have the chance to rebel and make it in January, but it just feels weird to me. Darn those genetics.
Back to the Taco Salad. I decided to whip it up over the weekend….for a family get together. I did however rebel from my mom’s recipe and make it a little more like a taco. If you need a salad to share with friends and family, or want to treat yourself to a tricked out salad, then this will be your new go-to salad.
1 packet taco seasoning
3/4 cup water
1 lb cooked ground hamburger
1 bag Doritos
Brown hamburger in skillet. Add taco seasoning and water. Simmer. Set aside to cool. Place shredded lettuce, chopped tomatoes, and shredded cheese in a bowl. Add the taco meat to the salad. Chill until ready to serve. When ready to serve, add Ranch dressing and toss to coat the salad. Crush the Doritos chips and mix into the salad. Ready to serve.
Variation: If you’re not into rebelling and want a less taco-y version, here’s how my mom always makes hers. Instead of adding taco seasoning to the meat, she just uses the plain hamburger meat. Also, instead of Ranch dressing she would use Creamy Italian. Just as delicious, but not as taco-y. And, yes, Webster will be adding “taco-y” to their updated version.
